A taste of sunshine

What, you may ask, is that citrus grandus?? It is called a "pomelo" and thought to be the ancestor of the grapefruit. My aunt and uncle went and visited my family in San Diego and brought back fresh, Californian avocados, oranges, and pomelos from our neighbor's backyard. These pomelos are enormous and a little bit sweeter than a grapefruit. Jeff insists that I made up the name, and just yesterday said, "Let's have one of those pomerados, pumintos, you know, those fake grapefruits!"

I have loved cutting one up for breakfast and imagining that I am about to put on my swimsuit and go for a dip, instead of what I do in reality: bundle up in my coat and head out to scrape off my windshield! It really is like a little taste of sunshine every morning. I can't wait to try this recipe for Thai Pomelo-Chicken Salad. One of my new year's resolutions (which, by the way, I wrote a month late) was to try new, healthy recipes.

I decided that in a fantasy world, I would have a live-in chef to cook me up delicious, guilt-free meals (a far cry my activities of this morning, in which I opened up a box of chocolates from Valentine's Day -- I know, but I was desperate for a chocolate fix -- and took one bite from each one!)

Whitney! I just got re-updated on your life and I wish that I lived in Provo so that I could come eat one of those delicious desserts with you!! I hope you guys are doing good and school is going well. I miss you!
